Find more healthy meal ideas from St. Joseph Health\u00a0<a href=\"https:\/\/www.stjhs.org\/health-library\/healthy-recipes\/recipe\/?CT=30&amp;C=21677\">here<\/a>.<\/p>\n<h3><b>Ingredients<\/b><\/h3>\n<ul>\n<li>3 nectarines, chopped<\/li>\n<li>1\/2 lb. fresh mushrooms, quartered<\/li>\n<li>1 cup cherry tomatoes, halved<\/li>\n<li>1\/2 cup pitted ripe olives (optional)<\/li>\n<li>1\/3 cup chopped green onions<\/li>\n<li>1 8-oz can artichoke hearts<\/li>\n<li>1 tbsp. vegetable oil<\/li>\n<li>1\/4 cup lemon juice<\/li>\n<li>1\/4 tsp. sugar<\/li>\n<li>1 tsp. tarragon, crumbled<\/li>\n<li>1\/2 tsp. thyme<\/li>\n<\/ul>\n<h3><b>Directions<\/b><\/h3>\n<ol>\n<li>In a large bowl, combine nectarines, mushrooms, cherry tomatoes, olives, and green onions.<\/li>\n<li>Drain and save liquid from the artichokes. Add the artichokes to the salad.<\/li>\n<li>Combine reserved liquid with remaining ingredients in a jar.
