The combination of sweet fruit and salty feta works with nearly all the summer fruits, so get creative and enjoy!<\/p>\n<h3><b>INGREDIENTS<\/b><\/h3>\n<p><b>For the Salad:<\/b><\/p>\n<ul>\n<li>4\u20136 cups organic arugula or other mixed greens<\/li>\n<li>2\u20133 peaches or nectarines (or try plums or cherries!)<\/li>\n<li>3\u20134 ounces feta, crumbled<\/li>\n<li>1\/4 cup slivered almonds<\/li>\n<\/ul>\n<p><b>For the Dressing:<\/b><\/p>\n<ul>\n<li>1 part vinegar (your choice; balsamic, apple cider, red wine, etc) or other acid (lemon juice, fresh<\/li>\n<li>orange juice, lime juice, etc)<\/li>\n<li>3 parts olive oil<\/li>\n<li>Salt &amp; Pepper to taste<\/li>\n<li>Fresh herbs to taste (optional)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><iframe loading=\"lazy\" title=\"Farmer&#039;s Market Salad\" width=\"1080\" height=\"608\" src=\"https:\/\/www.youtube.com\/embed\/042Rw7IDmbs?feature=oembed\"  allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture\" allowfullscreen><\/iframe><\/p>\n<h3><b>DIRECTIONS<\/b><\/h3>\n<ol>\n<li>Whisk or shake all ingredients together for your vinaigrette.<\/li>\n<li>Lightly toast the slivered almonds in a pan and set aside.<\/li>\n<li>Toss your greens with your dressing then top with sliced peaches or nectarines.<\/li>\n<li>Sprinkle feta and toasted almonds on top.<\/li>\n<li>Serve alongside your favorite grilled protein and a healthy whole grain or crusty bread if you prefer.<\/li>\n<\/ol>\n<p>Enjoy this healthy taste of summer!<\/p>\n<div id=\"left-area\">\n<article id=\"post-2504\" class=\"et_pb_post post-2504 post type-post status-publish format-standard hentry category-recipes\">\n<div class=\"entry-content\">\n<div class=\"et_pb_section et_pb_section_0 et_section_regular\">\n<div class=\" et_pb_row et_pb_row_1\">\n<div class=\"et_pb_column et_pb_column_4_4 et_pb_column_1 et_pb_css_mix_blend_mode_passthrough et-last-child\">\n<div class=\"et_pb_text et_pb_module et_pb_bg_layout_light et_pb_text_align_left et_pb_text_0\">\n<div class=\"et_pb_text_inner\">\n<p><em>*Maya Hayes is a Consultant for Employee Well-Being at Providence St. Joseph Health, holds a Masters in Public Health degree and is a Certified Nutrition Educator.
